Process Information: | Washed and soaked with two rounds of water, then to eliminate harmful fungi, it is soaked for approximately 3 to 4 hours in salt water with a 2 percent concentration. Afterward, the water is removed, and it is left to air out in the same tank. Then, it is transferred into a bag and tied up for a maximum of 30 to 36 hours. Next, it goes to a solar dryer to drain some water from the cherry. Afterward, it is stored in a bag all night until midday the following day, where it continues fermenting while drying. The process lasts approximately 20 days. |
