This coffee presents a delicate profile with notes of green tea, chamomile, apricot, and pomarrosa, complemented by the sweetness of panela. Process Information: | Cherries are put in a water tank to remove floaters then it is inmediately depulped. After that it is placed in african elevated beds creating a layer no thicker than 5 cm tall and it is all covered with a plastic tarp for 72 hours to avoid direct sun light Dried for 2 days at a temperature between 30 and 35 degrees in african beds, after this time the coffee is placed under a roof and elevated beds at a temperature between 20 and 25 degrees for 3 days and is finally put on a plastic tarp under a roof for the final stage of drying until reaching 11% humidity. |
