Process Information: | The coffee cherries were anaerobically fermented in containers for 3 days at 15 C, submerged in water and filled with honey and coffee pulp to maintain the temperature. After fermentation, they were transported to Zonanga for drying. At 35 C, the cherries were aired, inspected, and placed on shaded platforms with a roof and green mesh. The entire drying process takes about 28 days. |
