Process Information: | This coffee is the outcome of different fermentation methods. It started with a 36 hours anaerobic fermentation in cherry in closed plastic bags, then depulped and put into bags again for 72h. After these initial times, the beans were laid out in a thick layer in open air and moved regularly to avoid over fermentation. Then it was dried for 14 days with intermittent hours under the sun every day and avoiding the most intense sunlight hours of the day. |
