Process Information: | The cherries were placed in oxygen-free containers for 4 days, with an average temperature of 15°C. To keep the temperature low, they were submerged in water. Afterward, they were transported for 2 hours to Zonanga for drying. In Zonanga (35°C), the cherries are first aired and inspected to remove green and underripe cherries. Two hours later, they are placed on platforms without a roof but under the shade of mango trees. This process lasts approximately 30 days. |
